Strawberry Ice Cream | Easy + Dairy Free!
Ice cream is such a great way to cool down in the warm summer heat. One thing that’s better than eating ice cream when it’s hot is eating healthy ice cream! That’s exactly what I like about this strawberry ice cream recipe.
I used four simple ingredients to make this strawberry ice cream — frozen strawberries, raw honey, pink Himalayan salt (just a pinch), and water. And the pink salt is really optional.
In my Healthy & Moist Baked Chicken Thighs recipe, I mentioned purchasing course or large grain Himalayan salt by mistake. But, after blending you won’t find any trace of grains.
The flavor and texture are between ice cream and sorbet.
If you don’t eat dairy then that’s no problem. There is no milk in this recipe, but if you want to make it more like “ice cream” then you can replace the water with a milk alternative to give it some creaminess.
I would caution against using many store bought brands of almond or coconut milk because they often include other ingredients that aren’t so healthy.
And if you want your strawberry ice cream to be truly healthy then adding those types of milk products would just defeat the purpose.
Although I did recently find that many coconut and almond milk brands are excluding carrageenan, I’m not sure what other ingredients these companies may still include or what they might use to replace it.

I always like to mention when I make smoothies and ice cream that I’m using a Vitamix blender. This is a high-speed blender and not your standard countertop household blender.
Yes, the Vitamix is powerful enough to crush the fruit without adding any liquid, but I added a little water just to keep from overworking the blade.
If you plan on making this Strawberry Ice Cream I would strongly recommend using a high power blender. I’ve had mine for about 4 years to date and it still works perfectly fine.
When I decided I wanted to try and get more fruits and vegetables into my family’s diet, the Vitamix was the first kitchen tool I invested in. I don’t regret it.
I mainly use it to make smoothies and ice cream, but I have used it to grind einkorn wheat berries into flour. Although I wouldn’t advise anyone to make flour in this device.
Vitamix has a dry grains container made specifically for grinding grains into flour. Even though it worked perfectly fine for me, I wouldn’t want to be responsible for anyone ruining their blender.
What’s your favorite healthy ice cream treat to make in the summer? Thanks for sharing!
